  • 2 cups cherry tomatoes

  • 34 garlic cloves, minced

  • Salt and black pepper to taste

  • 2 cups fresh spinach or arugula

  • Fresh basil, for garnish

  • ¼ cup reserved pasta water (optional)

Instructions

  • Preheat oven to 400°F (200°C).

  • In a baking dish, combine cherry tomatoes, minced garlic, olive oil, salt, pepper, and red pepper flakes. Toss gently.

  • Place the block of feta in the center of the dish, surrounded by the tomatoes. Drizzle a bit of olive oil on top.

  • Bake for 25–30 minutes, or until the tomatoes burst and the feta is golden and soft.

  • Meanwhile, cook the pasta in salted water until al dente. Reserve ¼ cup of the pasta water before draining.

  • Remove the baking dish from the oven. Mash the feta and tomatoes together into a creamy sauce.

  • Add the cooked pasta and spinach to the dish. Mix well until the spinach wilts. Add pasta water if needed to loosen the sauce.

  • Garnish with fresh basil and serve hot!
